We made sushi at home tonight. I bought nori wrappers, and the ingredients to make the rice. I cut up mango, avocado, cucumber, and put out some shredded carrot, cream cheese, and some scrambled egg. The baby didn’t like it but my 8 year old did. That’s a good, easy gf meal that we can eat as a family, and use leftover odds and ends of vegetables at the same time! And the sushi wraps and rice are shelf stable, so I can keep them on hand!

you have others in your house who’ll eat sushi? now I’m jealous!
As far as the rice goes, how long did you spend prepping it? In my experience, the few times I’ve made sushi, prepping the ingredients was more of a Saturday afternoon affair than a Wednesday evening one… Still, I’m jealous…

The rice only took 30 minutes, and 26 of those were unattended cooking. I bought this sushi rice vinegar that already has the sugar mixed in. The cutting up the fruit and vegetables took the rest of the time. Trust me, this wasn’t san sushi or zen. And there was no raw fish involved, but hey, it tased ok with soy sauce. Can you see child #1 eating raw fish with tamari on a school night? BTW did you get my emails?

Yes I did. The way I made it in the past was pretty much the same thing, only after the rice cooked and the vinegar was stirred in, I let it cool completely, so I guess that took a lot of time in retrospect. That and I went cooo-cooo-puffs on ingredients so there was more cleanup. My friend Steve made spicy BBQ chicken sushi once. It tasted better than it sounds
