Made chili with Bob’s Red Mill 13 bean soup mix (I need to check on that one, the ingredients are just beans but the package has that line about being processed in a facility that processes wheat, nuts….). Good. Everybody ate it. Even the toddler.

I tried to make GF banana bread last night. The recipe said use “rice flour” or “GF baking mix”. Ok. I have a box of the baking mix. What the recipe didn’t tell me is that if you use baking mix, delete the baking soda from the recipe. I got it now. “Baking mix” = “Bisquick”. DO NOT add baking soda to bisquick. It does ugly things to your oven.

With rice pasta, lots of spinach, and organic tomato sauce and cheeses. Yum. The kids like this one.

This one was a winner tonight. Eggs, waffles (gluten free for me, regular frozen waffles cut into sticks for the kids). Next time I try gluten free pancake mix with honey for me and syrup for everyone else.

Anyone who has ever dined with someone between the ages of 3 and 10 knows the “how many bites” game. “We’re all eating the same thing.” “This is it, no food after dinner.” “If you eat 2/3 items off the plate you can have dessert.”

Thinking about and going gluten free (or any diet) just complicates things.

I want meals that everyone will eat, are healthy, I can make after work, and don’t break the bank.

As my site name describes, I’m planning to go gluten-free.  As I have time, I’ll post my plan, my reason for making the change, and what I’m hoping to gain.  Anyone want to join me?

Those who know me well know that I am an avid knitter.  My husband says I knit enough to clothe the local homeless shelter with hats and scarves each winter.  In reality, I love the feel of the yarn through my fingers, and the satisfaction of giving away something that I made.  I’d almost say it’s relaxing.  If you’re a knitter, check out the link to Black Sheep Bags for an easy (read: beginner) bag to knit and felt.

Visited the counselor today and yes…she says I’m not a quack!  Relatively high functioning, need to get my medical issues straightened out and I should hopefully feel better, but definitely not a flake (whew! what a relief!). ;)
